Greek fava and baked veg

 

One of my favourite meals 🧡 

Very satisfying and nourishing, and super simple to make!

Originally, this is a Greek recipe, using fava beans - but no worries if those are nowhere to be found where you live, cause you can use yellow split peas instead.

 

Fava hummus

  • Yellow split peas (or original split fava beans if you can get those) - amount depending on how much you want to make, I usually make 1-2 cups

  • Onion (not necessary)

  • Bay leaves

  • Extra Virgin Olive oil

  • Salt

Soak yellow split peas (or fava beans) overnight, pour the water out in the morning.

Cook them (in 2x the amount of water than the peas) until soft - with a couple of bay leaves and 1 onion chopped in half. When the peas are soft, take out the bay leaves and blend the peas (with the onion). Add TONS of olive oil 😁 (the more the better, I usually use cca 1/2-1 cup) and some salt to taste.

Originally, you would put kapari and some more olive oil on top. I didn't have any so I roasted some leek and sprouts on top. You can also use chopped olives or caramelized onion. My version is lighter to digest than onion.

 

Baked veggies

  • sweet potato

  • Squash

  • Celeriac

Or any other veggies that you like (carrots, parsley root, fennel....)

Chop to desirable pieces. Bake on cca 180·C with oil, oregano and salt or any other spices you like.

If you're baking sweet potato or squash, try the combo of oregano, salt and cinnamon. You'll love it.
